Bad, Bad, Prego Vegan

I'm growing a baby boy, and eating what I crave.  Obviously, there is still no meat in my diet (eewww), but there is some dairy.  I have not forgotten about this blog.  I still live a Veg/Carnivore life, but the posts have slowed way down. OK, they have stopped.  But I promise to get back to it soon!!! Thanks for following!

Cure All Noodles

-Spanish Proverb

These noodles are supposed to cure a hangover... All prepared in the microwave, all in minutes.  Then you can get back to the couch and back to the Law and Order marathon.  Let me know how it goes :)
Ingredients:

1 (16 ounce) package pasta of your choice (make sure egg free)
1/2 (8 ounce) container vegan cream cheese
1/2 (12 ounce) container vegan sour cream
1/2 (28 ounce) jar pasta sauce

Directions:

Cook the noodles by submerging them in water in a microwave-safe dish and microwaving for about 5 minutes; stir and repeat until completely cooked.  Drain and set aside.  Mix together the remaining ingredients in a separate bowl and nuke for 1 minute.  Place the noodles on a plate and top with the sauce.

No Bake Cookies

1/4 cup cocoa powder
1/2 cup peanut butter
1 teaspoon cinnamon
2 cups rolled oats

Directions:

Put the syrup, shortening, and cocoa powder in a bowl and nuke for about 30 seconds.  Add peanut butter and nuke for an additional 45 seconds.  Stir right away and continue stirring until combined.  Add the cinnamon and oats and stir until well combined.  Drop onto wax paper and put in the fridge for at least half an hour before serving.

I'm alive :)

I picked up a new book today called "PETA's Vegan College Cookbook."  Although I'm not in college, I like quick and easy meals quite often.  This book has lots of fast recipes... I'm going to be posting a few that I think Carnivore might eat, too. Stay tuned!

Chocolate Chip Cookies

~Health food makes me sick.~
-Calvin Trillin

Thank you to Vegetarian Times for this recipe. With simple and healthy ingredients, chocolate chip cookies can be a staple in your diet!

The Heart-Healthiest Chocolate Chip Cookies in the World

 Ingredients:

Makes 30 cookies
  • 3 Tbs. canola oil
  • 2 cups walnuts
  • 1 cup light brown sugar
  • 2 tsp. vanilla extract
  • 1½ cups oat flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • ¼ tsp. ground cinnamon
  • 2 cups rolled oats
  • 3 3.5-oz. bars bittersweet vegan chocolate, chopped, or 1½ cups vegan chocolate chips (12 oz.)

Directions:

1. Preheat oven to 350°F. Coat 2 baking sheets with cooking spray, or line with parchment paper.
2. Blend walnuts in food processor 30 seconds, or until ground into a fine meal. Add canola oil, and blend 2 to 3 minutes more, or until mixture has the consistency of natural peanut butter, scraping down sides of food processor occasionally. Transfer to bowl.
3. Whisk together brown sugar and ½ cup water in small saucepan, and bring mixture to a boil. Pour brown sugar mixture over ground walnut butter, add vanilla extract, and stir until no lumps remain.
4. Whisk together oat flour, baking soda, salt, and cinnamon in separate bowl. Stir oat flour mixture into walnut mixture. Cool 10 minutes. Fold in oats, then chocolate chips.
5. Shape cookie dough into 2-inch balls, and place 2 inches apart on prepared baking sheets. Flatten cookies with bottom of drinking glass dipped in water. Bake 8 to 10 minutes, or until cookies begin to brown and tops look dry. Cool 3 minutes on baking sheets, then transfer to wire rack to cool completely.

~We are indeed much more than what we eat, but what we eat can nevertheless help us to be much more than what we are.~
-Adelle Davis

I have heard about Black Bean Brownies for a couple weeks now, but haven't had a chance to make them.  I found this vegan recipe online, and am challenging you all to make them and report back! Apparently they are divine, and you can't taste the black beans at all, but get the nutritional benefits! :) Keep me posted!

Vegan Black Bean Brownies

Ingredients:

  • 15 ounces black beans, drained and rinsed
  • 2 whole bananas
  • cup agave nectar
  • ¼ cup unsweetened cocoa
  • 1 tbsp cinnamon
  • 1 tsp vanilla extract
  • ¼ cup raw sugar (optional)
  • ¼ cup instant oats
Instructions:
Preheat oven to 350F. Grease an 8x8" pan and set aside. Combine all ingredients, except oats, in a food processor or blender and blend until smooth, scrapping sides as needed. Stir in the oats and pour batter into the pan. Bake approx 30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool before slicing.  Note: if you find these brownies are too soft or too fudgey, add another 1/4 cup oats or flour.

Vegan Pasta

~Those who forget the pasta are condemned to reheat it.~
-Author Unknown

Not for the carnivore, but it would be easy to make the pasta, then separate it into two batches before adding vegetables. Top with tomato sauce for carnivore, complete recipe for vegan.

Quick Pasta Recipe

1/2 pound orecchiette
EVOO
1 box of Birds Eye “Tuscan Vegetables in an Herbed Tomato Sauce” (in frozen vegetable section)
1/2 bunch fresh asparagus
1/2 bag fresh or frozen corn

Cook the pasta in salted and oiled water for 10 minutes, or until al dente. Meanwhile, clean the asparagus, break off the ends, and steam until cooked, but slightly crisp. Strain pasta and return to pot. Put two turns of the pan of EVOO into pasta and stir, making sure all orecchiette gets coated. Add asparagus to pasta, stir. Warm up corn and add to pasta. Steam the Birds Eye vegetables in the microwave for 4 minutes, add to pasta. I do not add more tomato sauce, because I like this dish with more of an EVOO dressing than tomato sauce covering. Pepper to taste.

Hummus for All!

~When baking, follow directions. When cooking, go by your own taste.~
-Laiko Bahrs

One appetizer that Carnivore and I both agree on is pita and hummus. We are picky in our flavors though, so often times we stick to store bought Roasted Red Pepper. However, I blended a few recipes together to create this concoction, and it is delicious! (and so easy to make--start to finish is about 5 minutes)

Ingredients:

2 Tablespoons sesame seeds
1/2 teaspoon sesame oil
1/4 teaspoon salt
1/4 cup tepid water
4 garlic cloves
2 cups canned chickpeas, drained, liquid reserved
1 1/2 teaspoons kosher salt
6 tablespoons freshly squeezed lemon juice (2 lemons)
2 tablespoons water or liquid from the chickpeas
8 dashes hot sauce
6-8 pieces roasted red pepper

Directions:

Place sesame seeds in a blender or food processor and grind until smooth. Add sesame oil and 1/4 tsp salt. Process until combined. With the motor running, add the 1/4 cup tepid water in a very slow, steady stream and blend until smooth.

While running the food processor, drop the garlic down the feed tube; process until it's minced. Add the rest of the ingredients to the food processor and process until the hummus is coarsely pureed. Taste, for seasoning, and serve chilled or at room temperature.

Interesting article

~If nature had intended our skeletons to be visible it would have put them on the outside of our bodies. ~
-Elmer Rice

Interesting viewpoint on healthy eating found in Time Magazine...

Orthorexia: Can Healthy Eating Be Labeled a Disorder?

Kristie Rutzel was in high school when she began adhering precisely to the government food pyramids. As the Virginia native learned more about healthy eating, she stopped ingesting anything processed, then restricted herself to whole foods and eventually to 100% organic. By college, the 5-ft. 4-in. communications major was on a strict raw-foods diet, eating little else besides uncooked broccoli and cauliflower and tipping the scales at just 68 lb. Rutzel, now 27, has a name for her eating disorder: orthorexia, a controversial diagnosis characterized by an obsession with avoiding foods perceived to be unhealthy.
As the list of foods to steer clear of (bye-bye, trans fats and high-fructose corn syrup) continues to grow, eating-disorder experts are increasingly confronted with patients like Rutzel who speak of nervously shunning foods with artificial flavors, colors or preservatives and rigidly following a particular diet, such as vegan or raw foods. Women may be more prone to this kind of restrictive consumption than men, keeping running tabs of verboten foods and micromanaging food prep. Many opt to go hungry rather than eat anything less than wholesome.
Yet when Rutzel first sought help for anemia and osteopenia, a precursor of osteoporosis triggered by her avoidance of calcium, her doctor in upstate New York, where she attended college, had never heard of orthorexia. "You should be trying to eat healthy," she remembers him telling her. He couldn't quite grasp that he was talking to a health nut who believed there were few truly healthy foods she felt were safe to eat. Her condition was eventually identified as anorexia, a diagnosis that organizations like the Washington-based Eating Disorders Coalition think is a mistake. The group, which represents more than 35 eating-disorder organizations in the U.S., wants orthorexia to have a separate entry in the bible of psychiatric illness, the Diagnostic and Statistical Manual of Mental Disorders (DSM)
For the past decade, psychiatrists have been working on the fifth edition of the DSM - referred to as DSM-V - to refine the classifications used by mental-health professionals to diagnose and research disorders. Without a listing in the DSM, it's tough to get treatment covered by insurance. And for researchers angling for grant money, a disorder's absence from the DSM makes it hard to get research funded.
On Wednesday, the first draft of DSM-V was published online, kicking off a three-year process of public comment and further revisions that will culminate in a new and improved version come 2013. Orthorexia is not listed in this new draft and, despite the ongoing efforts of various eating-disorder groups, is unlikely to make its way into the final edition.
"We're not in a position to say it doesn't exist or it's not important," says Tim Walsh, a professor of psychiatry at Columbia University who led the American Psychiatric Association's work group that reviewed eating disorders for inclusion in DSM-V. "The real issue is significant data." Getting listed as a separate entry in the DSM requires extensive scientific knowledge of a syndrome and broad clinical acceptance, neither of which orthorexia has.
Most doctors think a separate diagnosis is unwarranted. Orthorexia might be connected to an anxiety disorder or it might be a precursor to a more commonly diagnosed condition, says Cynthia Bulik, director of the eating-disorders program at the University of North Carolina at Chapel Hill. "We don't want people to be mislabeled and not get the care they need because they're actually on the slippery slope to anorexia," she says.
Kathleen MacDonald, who oversees legislative policy at the Eating Disorders Coalition, agrees with Bulik that people should get the care they need. Which is precisely why she thinks orthorexia should have its own classification. Although Bulik and others often use cognitive behavioral therapy, in which patients like Rutzel are coached to replace obsessive thoughts with healthy ones, MacDonald worries there is not enough known about which treatments work best for orthorexia. "It's hit-or-miss," she says.
After seeking help at three different facilities, Rutzel finally embraced a program of meal plans that challenged her to gradually incorporate foods she had blacklisted. Still slim in a size 2, she is engaged to a man whose oldest daughter is 9. And Rutzel says she is looking forward to sharing her experiences with food with her soon-to-be stepdaughter. "It's O.K. to eat potato chips and Pop-Tarts," says Rutzel, "but only every now and then."

Yummy Chinese

~You do not sew with a fork, and I see no reason why you should eat with knitting needles.~
-Miss Piggy

Chinese food is one of those mystery foods, depending on the restaurant you dine in.  You can ask them ten questions about how something is prepared, but you'll probably come away just as clueless as you started.  Every "family style bean curd" is different than the next, who exactly is General Tso?, and don't get me started on the broth in the Tofu soup.  So, as with most foods, it is best to prepare it yourself at home.  This recipe turned out delicious, and is very easy to make.  Because you prepare the protein separate from the vegetables, vegan and carnivore can use the same sauce with their preferred protein.  (And leave the peppers out, if need be.) The warm pineapple provides the true meaning of the name "Sweet and Sour."  Serve with steamed brown rice and/or rice noodles.

Ingredients
  • 1 20-ounce can pineapple chunks or tidbits, packed in juice
  • 3 tablespoons rice-wine vinegar
  • 2 tablespoons ketchup
  • 2 tablespoons reduced-sodium soy sauce (I use Braggs)
  • 1 tablespoon brown sugar
  • Carnivore protein of choice, or 1 14-ounce package extra-firm water-packed tofu, drained, rinsed and cut into 1/2-inch cubes
  • 2 teaspoons cornstarch
  • 2 tablespoons canola oil, divided
  • 2 tablespoons minced garlic
  • 1 tablespoon minced ginger
  • 1 large red bell pepper, cut into 1/2-by-2-inch strips
  • 1 large green bell pepper, cut into 1/2-by-2-inch strips

Directions
  1. Drain and set aside pineapple, reserving 1/4 cup of the juice. Whisk the reserved pineapple juice, vinegar, ketchup, soy sauce and sugar in a medium bowl until smooth. Place meat/tofu in a large bowl; toss with 3 tablespoons of the sauce. Let marinate for at least 5 minutes and up to 30 minutes.
  2. Meanwhile, add cornstarch to the remaining sauce and whisk until smooth.
  3. Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Transfer the meat/tofu to the pan using a slotted spoon; whisk any remaining marinade into the bowl of reserved sauce. Brown the meat or cook the tofu, stirring every 1 to 2 minutes, until golden brown, 7 to 9 minutes total. Transfer to a plate.
  4. Add the remaining oil to the pan and heat over medium heat. Add garlic and ginger and cook, stirring constantly, until fragrant, about 30 seconds. Add red and green peppers and cook, stirring often, until just tender, 2 to 3 minutes. Pour in the reserved sauce and cook, stirring, until thickened, about 30 seconds. Add the meat/tofu and pineapple and cook, stirring gently, until heated through, about 2 minutes more.

Mac and Cheese, at last!

~Vegetables are a must on a diet. I suggest carrot cake, zucchini bread, and pumpkin pie.~
-Jim Davis

One thing I remember vividly is the taste of Macaroni and Cheese.  I have not been able to reproduce this childhood favorite, thus far.  I don't know about you, but all those boxed vegan Mac 'n Chreeze attempts are just not good.  So I decided to branch out, bring in some new flavors, and see what I end up with.

I veganized a Rachael Ray recipe for Butternut Squash Mac and Cheese, and it turned out so much better than I expected. This recipe uses the vegetable and herbs to kick up the flavors, so that the fact the cheese is imitation does not affect the taste.  I highly recommend making the vegan version for both of you, but if carnivore is similar to mine, then you'll probably have to make two.

Ingredients

  • 1 pound macaroni with lines, such as tubatini or mini penne rigate (make sure egg free)
  • Salt
  • 1 tablespoon extra-virgin olive oil, 1 turn of the pan
  • 2 tablespoons butter (earth balance)
  • 1/2 medium onion (I used one shallot, since I'm not a huge onion person)
  • 2 tablespoons chopped fresh thyme leaves, plus a few sprigs for garnish (dried works, too)
  • 3 tablespoons all-purpose flour
  • 2 cups chicken stock (change to vegetable stock)
  • 1 (10 ounce) box frozen cooked butter nut squash, defrosted
  • 1 cup cream or half-and-half (original soy milk)
  • 2 cups (8 ounces) sharp Cheddar, grated (Follow Your Heart cheddar)
  • 1/2 cup grated Parmigiano-Reggiano, a couple of handfuls  (Follow Your Heart mozzarella)
  • 1/4 teaspoon ground nutmeg, eyeball it
  • Black pepper

Directions

Heat a pot of water to boil for the pasta. Salt the water then add the pasta and cook to al dente or, with a bite to it.
While pasta cooks, heat a medium heavy bottomed pot over medium heat. Add the extra-virgin olive oil and butter. When the butter melts into the oil, add the thyme and grate the onion directly into the pot with a hand held grater or Microplane. Cook the grated onion in butter and oil 1 to 2 minutes, then add flour and cook together 1 to 2 more minutes. Whisk in stock, then combine with butternut squash until warmed through and smooth. Stir in cream or half-and-half and bring sauce to a bubble. Stir in cheeses in a figure 8 motion and season the completed sauce with salt, nutmeg and pepper. Taste to adjust seasonings.
Drain cooked pasta well and combine with sauce, top with thyme leaves picked from remaining sprigs.

pill poppin'

~Laughter is the best medicine.~
-Proverb

You may not even realize when you take your daily vitamins, pump echinacea when you're coming down with a cold, or nyquilling your way through a night, that you are ingesting large amounts of gelatin. Everyone knows that jello is packed full of it, but vitamins?  Yep, those softgels are wrapped in the same boiled bone substance that we all avoid.

So how do you avoid this? Check out http://www.vegetarianvitamin.com/ for several options of vegan vitamins.  Also, when given the choice between gelcaps and standard tablets, go for the basics.  Although all meds in the US are tested on animals before being put on the shelves, you can reduce the intake of gelatin by not buying those coated in gelatin.  And carnivore won't know the difference between two pill types, so you might as well change out the whole medicine cabinet!  Because, let's face it, last time I checked, animal skin and bones did not cure the common cold. Yuck.

Best Pizza Award

~The trouble with eating Italian food is that five or six days later you're hungry again. ~
-George Miller

Late night snack.  Quick dinner.  Watching the game.  Frozen pizza is a good thing to keep on hand for those lazy days.  We have tested several, and here are the winners:

The Vegan's Pizza:  Amy's Roasted Vegetable Pizza--full of flavor, good crust, vegan yumminess.  Can top with Follow Your Heart cheese before baking for extra flavor.

The Carnivore's Pizza:  California Pizza Kitchen Sicilian--lots of meat, none of the veggies, good cheese, thin crust.

Don't waste your money on the other stuff.... these are hands down the best :)

who knew?

~I saw few die of hunger; of eating, a hundred thousand.~
 - Benjamin Franklin

The following list of ingredients to avoid were shocking at first.  I discovered that many of the items in my pantry I thought were vegan were in fact not.  This is something worth printing and carrying in your car for grocery store runs, recipe building, and eating out (for restaurants with ingredient lists).  Thank you to The Vegan Wolf for this information!

A few common ingredients found in lots of "seemingly" vegan food.... to look out for include:
  • Gelatin (including marshmallows)
  • Casein (calcium caseinate) (Found in soy cheese sometimes....)
  • Rennet (Also found even in soy cheese sometimes....)
  • Whey (a dairy product found in lots of things... breads, margarine...
    Also look out for :
  • Mayonnaise…most contain egg
  • Pasta…. Some contain egg

trader joe's withdrawal

~Food for thought is no substitute for the real thing.~
 -Walt Kelly

I have been very bitter recently. Perhaps it is the cold, cold, cold temperature outside. It might just be gearing up for another semester of hard work, yet still feeling a bit tired and run down from the last semester! However, it seems that I become most bitter when the topic of Trader Joe's comes up--furthermore, just the mention of St. Louis, Atlanta, L.A., New York, and many more cities that I know are lucky enough to possess a TJ's makes me angry.  After living near a TJ's for two years, and depending on their food selection and prices (and 2 buck chuck wine!) I feel like I can't find the same alternatives in standard grocery stores nearby.  Whole Foods does a good job, but the locations are not the most convenient, and the prices are high.

So, here's to you, you lucky TJ neighbors... take advantage of the wonderful store you have access to.  You'll miss it when it is gone!

Below is the link to the page of vegan items available at TJ's.  Many items are Carnivore friendly, which makes it quite worth the money!

And, if you happen to be near a TJ's, don't forget about this little vegan who would love some goodies brought back to her!
